Onion pie from Mykonos

For the homemade fyllo douch 
500 gr. self rising flour
1 egg
50 ml "Armakali" extra virgin olive oil
100 ml lukewarm waterwater
½ tsp salt

For the filling
1 kg tirovolia cheese from Myconos Dairy (Tirokomeio Mykonou)
3 kg of thinly sliced onions
2 bunches of shallots
1 bunch of dil, chopped
75 ml "Armakadi" extra virgin olive oil
4 eggs
salt- pepper


For the homemade fyllo douch
Mix the flour with the rest of the ingredients (egg, extra virgin olive oil, salt). Add water and knead until the dough is smooth and holds its shape. Rest for an hour.

For the filling
Prepare the filling by putting the cheese into a ball and adding the shallots, the dill, the beaten eggs, the olive oil and the salt and pepper. Blend the ingredients until they are combined. Oil the bootom and the sides of a medium size pan.
Divide the dough into two halves. Spread the filling evenly and cover it with the second half of the dough. Gently roll the edge of the bottom roll inwards.
Brush the top of the pie with olive oil and scar with a sharp knife. Bake in a preheated oven in 180οC for 45΄- 50΄ until it is crispy and golden.
