Savvas has an utterly Greek and savoury recipe for you(black eyed beans salad) with ingredients from where else? From his traditional Greek food store located in island of Mykonos.
½ kg “Ktima Eliki” beans
2 tsp “Chion” salt
½ cup “Armakadi”olive oil
one lemon juice
1 sliced onion
100 gr “Anestakos” black olives
1 ripe tomato
Rinse the beans and bring them gently to a boil in plenty of water. Take the saucepan off the heat and allow them to sit in the water for approximately 1 hour. Then drain off the water, add fresh warm water and cook them again for another 1 ½ hours.
Add salt and when the beans are tender take them off the heat and drain them again. Transfer them to a plate and add olive oil, lemon, parsley and onion. Season with black olives and slices of tomato.
